This was dinner tonight! Stuffed peppers and enchiladas. I posted the recipe for the peppers earlier and wanted to try it out. It was good but a little bland for my taste so I’ll have to work on that! Here is my enchilada recipe!
- 8 Corn Tortillas
- 1 Lb hamburger meat (or shredded chicken)
- 1 cup salsa (I used medium)
- 1 & 1/2 cups mixed shredded cheese
- 1 can gluten free enchilada sauce
First brown the meat in a frying pan. When meat is cooked drain it and add a half cup of salsa and a half cup of cheese and stir well. Pour the other half cup of salsa into a 9x13 rectangular baking dish and spread evenly across the bottom. Spoon hamburger meat mixture into tortilla shells and line up in pan. Cover enchiladas with enchilada sauce and the cup of left over shredded cheese. Bake at 450F for 10 minutes or until cheese is completely melted and enjoy!
