A couple weeks ago I missed classes because I got glutened which I explained to my professors in the standard, “Sorry I can’t make class today” e-mail. None of them answered which made me think they either didn’t care or thought I had made up some fancy excuse. BUT TODAY! Today we were watching a movie in my morning class and the professor brought orange juice and doughnuts for the class. I was bummed when I walked in and saw them but happy I took the time to eat breakfast when to my surprise she walked up to me holding an oversized chocolate chip gluten free muffin! I was so thankful that she thought of my I could have hugged her. In a class of 50 students (not to mention hr 4 other classes) I never would have expected her to remember me. I mean, she must have taken the time to look up what celiac is and what I can eat and then find a store that carried those items. Make a special trip to the store and pay the ridiculous gluten free prices all to bring me that muffin. She turned my otherwise crappy week around. I mean gluten free muffins aren’t even something I splurge on for myself, I’ve never had one! I just can’t say enough about how much little things like this mean to me :)
wrote their URL on a dollar bill and went out and spent it. Then if you ever found a dollar bill youd go to that tumblr and tell them how far its traveled. What if people started relationships because of it? My mind is crazy this late at night sorry. But I say we all do it… Ill go spend my dollar tomorrow.

I will celebrate my one year “anniversary” of my diagnosis and I’m just thinking back a little. When I first got the news I was so excited to finally, after 5 years, have an answer to my health issues. Then I went through the typical “fuck my life, I hate everything, I just want good food, give me a damn piece of bread, I can’t eat anything or go anywhere” phase. After about 6 months it leveled out (I still have my days though, like the other night at the party when all there was to drink/eat was beer and cupcakes). But really, I might be crazy here, I don’t hate gluten free food. I like most of the available substitutes and I rarely crave “normal” food. Yeah I just said that… I like gluten free substitutes. Bread, pasta, pizza, even frozen meals. It took trial and error to find the right ones of course but now, I’m content and I’m healthy, and that’s a great place to be :)
